Heart Healthy Blueberry Salmon

Blueberry Salmon

Blueberry Salmon is heart healthy dish coated with a glaze made from blueberries and herbs. It is a delicious addition to any dinner spread.

Course - Main Dish

Servings: 4

Ingredients:

  • 4 4-5 oz Wild Caught Salmon fillets
  • 1/2 cup fresh blueberries
  • 4-5 sprigs Fresh thyme
  • 1 tbsp coconut sugar or 1 tbsp honey or try stevia as a substitute
  • 1 tbsp Balsamic vinegar
  • 1 tsp crushed garlic
  • 2 tsp Lemon juice
  • 1/2 tsp salt divided
  • 1/4 tsp Ground black pepper

Instructions

  1. In a small sauce pot, add the blueberries, thyme, coconut sugar/honey/stevia, balsamic vinegar, crushed garlic, lemon juice, and ¼ teaspoon of salt. Place over medium heat. Boil for 15 minutes, stirring occasionally. The sauce will reduce and thicken.

  2. Place the oven rack 6 inches from the broiler. Preheat oven to broil. Line a baking sheet with parchment paper.

  3. Rinse and pat salmon fillets dry with paper towels. Sprinkle both sides of the fish with a pinch of salt and pepper.

  4. Place the fish skin side down on the baking sheet.
    Brush a thin layer of the blueberry mixture onto the salmon. Place the fish under the broiler for three minutes. Brush an additional thin layer of glaze on the fish. Place back under the broiler for an additional 3-5 minutes. The salmon should flake when pressed with a fork once cooked, be sure not to overcook.
