Summer BBQ and Picnic Time! Nothing Better than Deviled Eggs Done 3 Ways!

One of my favorite summer-time eats is deviled eggs. Great to bring to BBQs and other get-togethers over the summer months to help you stay on track with your food plans!

Course - Main Dish

Servings: 4

Ingredients:

Variation 1 - Basic Paleo Mayo Deviled Eggs

  • 6 large free range eggs
  • 4 tbsp Primal Defense Mayonnaise
  • 1/2 tsp organic dry mustard powder or 1 tsp GF dijon mustard
  • 1/8 tsp Sea salt
  • 1/8 tsp white pepper
  • 3/4 tsp paprika to sprinkle on top

Variation 2 - Smokey Roasted Pepper

  • 1/8 cup drained and chopped jarred or grilled roasted red peppers
  • 1/8 tsp smoked paprika more for sprinkling
  • 1 tbsp fresh cilantro chopped

Variation 3 - Bacon Avocado (OMG!)

  • 6 large free range eggs
  • 1 large Avocado
  • 2 tbsp bacon, cooked and crumbled ideally beef, but if pork be sure free
  • range/organic
  • 1 tbsp jalapeño finely diced
  • 1 tbsp organic red onion minced
  • 2 tbsp organic fresh tomato, diced leave out if tomato an issue
  • 1/2 organic fresh lime juiced
  • 1 tbsp organic cilantro chopped
  • sea salt and white pepper to taste
  • Chili powder for garnish/sprinkle

Instructions

Variation 1 - Basic Paleo Mayo Deviled Eggs

  1. Place the eggs in a saucepan and cover with cold water. Place on stove and bring to a boil. Once boiling, turn off heat and cover. Let stand for 12 minutes. Drain and transfer the eggs to an ice bath for a minute to cool. Peel off shells.

  2. Slice eggs in half and scoop out yolks into a bowl. Mash the yolks and stir in mayo, mustard, salt and pepper. Mix well then pipe the yolk mix onto the egg whites and sprinkle with paprika for nice finishing color. Chill over night in an air tight container in fridge.

Variation 2 - Smokey Roasted Pepper

  1. Prepare the eggs as in Basic recipe

  2. To the yolks, mix in the basic list and peppers, smoked paprika until well mixed and top the eggs. Sprinkle with small amount of smoked paprika and top with a sprinkle of fresh cilantro (do this just before serving to keep fresh). Store as above.

Variation 3 - Bacon Avocado (OMG!)

  1. Prepare eggs as in basic recipe.

  2. To the yolks, mix in all above except chili powder. Fill the whites with the yolk mixture and sprinkle with pinch of chili powder. Also great to garnish with a few bits of bacon. Store same as basic recipe. (You better make enough of this one!)
