This recipe we are focusing on a new start and dedication to your health for the year, with the introduction of detoxification. Whether you’ve started a detox, in the middle, or in the contemplation phase, this Paleo Detox Salad is a delicious and easy to prepare dish to add in.

This salad is packed full of simple, nutrient dense ingredients which will all help in supporting the detoxification process. The beets act as an anti-inflammatory and help with cleansing the liver, while the cabbage provides significant amounts of Vitamin C, B6, and Biotin. Kale also provides high amounts of Vitamin C and B6, but also extremely rich in carotenes which work as an antioxidant in supporting the immune system. The dressing comprising of lemons, sunflower seed butter, ginger, and apple cider vinegar work together in decreasing inflammation, and supporting overall liver function.

Servings: 6 Cups

Ingredients:

  • 3 Large Beets Peeled and shredded (about 2-3 cups)
  • 1/2 Head Green cabbage Finely chopped (about 2 cups)
  • 1 Bunch Dinosaur kale De-stemmed and shredded (about 2 cups)
  • 1/2 Cup Fresh cilantro Finely chopped
  • 1 Lemon Zested

Instructions

Detox Salad

  1. Combine all the ingredients in a large mixing bowl.

Detox Salad Dressing

  1. Combine all ingredients in a food processor or blender and blend for 1-2 minutes, or until smooth and creamy. {double recipe for heavier dressing}

  2. Toss the salad ingredients with the dressing. Plate and top off with a generous sprinkling of the fresh lemon zest.

  3. Note: to make sunbutter, place ½ cup sunflower seeds in a food processor for ~5 minutes, or until “buttered.”
