One question that we frequently get from our patients is “What can I use if I can’t eat bread?” Using lettuce as a vehicle of delivery is a simple answer to that question. This week we are sharing with you a recipe for Collard Green Wraps. Not only are these wraps healthy and gluten free, but they are quick, easy, and stress free.

Any lettuce can work for this recipe but collard greens are strong, and large enough to wrap all your ingredients without falling apart. They are completely customizable and can be a great way to use leftovers to create a brand-new meal or to clean out the fridge.

Course - Main Dish

Servings: 4

Ingredients:

  • 2 Collard leaves
  • Veggies of choice carrots, cucumber, avocado, asparagus, sprouts, zucchini, etc
  • Protein of choice
  • Spread of choice hummus, guacamole, tahini, avocado oil mayo, etc.

Instructions

  1. Clean and dry leaves completely. Remove the stalk up to the green leafy part.

  2. Then using a knife carefully trim the stems so that they are the same thickness as the rest of the leaf and easier to fold.

  3. Place the two leaves flat and overlapping about halfway so that the stalks are at opposite ends.

  4. Apply spread near the top/middle of each leaf and fill with desired veggies and protein.

  5. Wrap like a burrito, cut in half, and enjoy!
